The challenge: bring your family together safely to celebrate a birthday without … A) going completely bonkers on carbs, and B) breaking your covid bubble carelessly. My thought was mask up and stay as far away from each other as one might do in a restaurant, if one is desperate enough to finally go eat out (more on that in another post).
Challenge accepted!
Start planning your brunch by creating an editable Google-Docs based menu with some of your favorite or great sounding dishes from awesome keto food bloggers. And, don’t be afraid to modify a recipe to keep it mostly keto, like the breakfast casserole below.
I also grabbed a keto-friendly prepared appetizer to save a bit of sweat the day of, along with some kid- & nonketo-friendly favorites to round out the easy stuff.
As for the socially distancing precautions, I set up our smaller mid-century house to have three sections (1 involved our sunroom with windows cracked for fresh air). Our contemporary dining table has pull-out leaves so sitting at either end kept us the required six feet apart. Then I hauled my oval coffee table from the sunroom to our living room to serve as a low-slung place to park food & drink near our modular seating. Whew, and now for ….
