YES! Why not have a crave-worthy meal for your first of the day? I don’t know why I didn’t think of making a low-carb version of French toast until now … wait, I do. It took me this long to find a decent bread for the task. Say what you will about Aldi’s: it’s limited (check!), it’s a cheap Trader Joe’s (check!) it doesn’t have much for keto folk — ummmm, UNcheck. Now you can walk into even one of the chain’s smaller stores and regularly find their L’oven Fresh Zero Net Carbs Wheat Bread. And, yeah, that’s right it’s got ZERO (zip, nada, nil) net carbs per slice!

Unicorn No-Carb Bread
This is a big deal for me. I remember going on a wild goose chase after rumors of this unicorn of a commercial bread broke in low-carb meccas, like California. We traveled all over our immediate area (upstate NY) visiting some bigger Aldi’s in hopes of finding it about a year ago. I actually wondered if the bread didn’t test well with customers and wasn’t rolling out to other markets. Then we stumbled on it randomly about two months ago. Ever since, I’ve been “l’oven” that it’s awesome for toast, grilled cheese, turkey sandwiches, and noshing on in general. Then the light bulb went off. Enjoy one of my childhood favorite breakfasts when I break my fast — typically around noon. YAY!

Protein Bonanza
Aldi’s Zero Net Carbs Bread comes packed with 5g of protein per slice; combine that with 6g in a large egg for a powerful punch of nutrition. I used two eggs to make four slices of my French toast, so figure approximately 16g for two very filling slices. I choose Wegmans Organic Cage-Free Brown Eggs and Kirkland’s Vanilla Organic Unsweetened Almond Milk to dunk the bread in. Oh, and I sauteed the slices in absolutely divine Olivado Cold Pressed Extra Virgin Macadamia Nut Oil.
Not only rich in natural antioxidants, like palmitoleic acid, this Australian nut oil has a high smoke point that’s perfect for cooking. Plus, Olivado claims it can promote weight loss by boosting metabolism by 10%. I was really excited to order this oil directly from the company since cutting the cord to Amazon Prime’s instant gratification. So delish and well worth the extra shipping time!

Of course, I had to top my tasty toast with something besides the usual maple syrup to keep it keto. A dollop of fresh whipped cream with Lakanto Monkfruit Sweetener took a couple of minutes to do (if that). Sprinkled with a spoonful of frozen wild blueberries, this is French toast that’s more dessert than breakfast — no matter when you enjoy it!
